One of my favorite things about married life are those slow quiet mornings where we take our time and cook and eat breakfast together. Unfortunately we have this habit of over filling our schedules and haven’t had the time to do this in a long time. Poor Joe got sick today and it forced us to slow down for once. This is what I made this morning:
Its smoked trout over a toasted english muffin with mixed greens and sea salt seasoned soft boiled eggs. All topped with crumbled Boursin garlic and herb cheese and two green olives.
And for my sick hubby – Roasted garlic chicken soup with bow tie pasta and spinach.
